I've just started to try lagers. I have one in primary one and secondary. Yesterday I put them both outside on my back deck. I brought the one in primary in at night, and it was a nice 52 degrees. I left the one in secondary out there, hoping it will stabilize to a temperature somewhere in the 40's.
My question is: Is there anything wrong with temperature swings that may result from an outside fermentation? I had a friend who encountered a stuck fermentation with a lager that was fermenting in a garage in August, but that was, of course, a lager in August.
Also, are low temperatures in the conditioning phase and important as low temperatures in the lagering phase?
